Simple & Protein-Packed Sprouted Black Bean Quinoa Salad:
I am super excited to share this Simple Black Bean Quinoa Salad recipe because I got to partner with the sprouted foods company Second Spring to try out some of their amazing products.

The first recipe I created for them is a Simple Black Bean Quinoa Salad that you can eat warm or cold and makes the perfect side dish with many meals! Make a big batch and bring to a family BBQ or divide into mason jars and pack it as part of your lunch for the week. The black beans and quinoa in this recipe mean that you will be getting adequate protein and healthy carbohydrates!
Simple Black Bean Sprouted Quinoa Salad:
- 2 cups cooked Second Spring Organic Sprouted Black Beans
- 2 cups cooked Second Spring Organic Sprouted Quinoa
- 1 cup cooked corn
- 2 tbsp avocado oil
- 1 cup fresh cilantro, chopped
- 1 tbsp cumin
- 2 tbsp chili powder
- 3 cloves garlic, minced
- 1 lime, juiced
- 1/2 red onion, diced
- 1 bell pepper, diced
- 1 cup tomatoes, diced
- salt and pepper to taste
- Combine everything in a large bowl and mix well.
- Serve and enjoy!
