
If you have been following me for awhile you know how much I love avocados. They are delicious and quite versatile. Not only that, but they are nutrient dense!
Avocados contain high levels of:
- -pantothenic acid
- -fiber
- -vitamin K
- -copper
- -folate
- -vitamin B6
- -vitamin E
- -vitamin C
- -and more!
AND one of the main reasons I love avocados is due to their high healthy fat content! Healthy fats are key for so many basic functions in your body and they are needed to assimilate fat-soluble vitamins A, D, E, K
Because they are so nutrient dense they support cardiovascular, skin, eye, immune, and digestive health as well as weight loss.
One downside is that they are not grown in Canada so be mindful of that. AND they go bad very quickly so try to only buy as much as you are going to use right away. However, you can now buy frozen avocado which is a great alternative for smoothies.
How should you prepare it?
- -guacamole and in tacos
- -pesto
- -smoothies
- -avocado toast
- -sandwiches, wraps, salads
- -in soups
- -dressings
- -on fish

Taco Mason Jar Salad:
Ingredients:
- 1 cup cooked brown rice
- 1/4 cup cooked corn
- 1/2 cup cooked black beans
- 1/4 cup red bell pepper, diced
- 1/4 cup red onion, diced
- 1 clove garlic, minced
- 1 cup cooked sweet potato chunks
- 1/2 lime, juiced
- 1 tbsp apple cider vinegar
- 1 tbsp avocado oil
- 1/4 tsp cumin
- 1/4 tsp coriander
- 1/4 tsp paprika
- 1 cup spinach
Directions:
- Combine paprika, coriander, cumin, avocado oil, apple cider vinegar, lime and garlic and place at the bottom of a jar
- Next add red bell pepper and red onion
- Add corn and black beans
- Then add brown rice
- Next, add the sweet potato
- Top with spinach
